A snap to create, these no-bake parfaits can be made a day ahead and refrigerated, then assembled just before serving.

INGREDIENTS
4 chocolate brownie cookies, broken
1/2 cup + 4 tsp. heavy cream
2 Tsp confectioners’ sugar
1/2 tsp vanilla extract
2 cups raspberries or strawberries
2 Tsp 60% dark chocolate chips
Mint sprigs (optional)

DIRECTIONS
Dividing equally, place half of cookie
pieces in bottoms of 4 Dessert glasses. In jar with lid, mix 1/2 cup cream, sugar, and vanilla. Cover. Shake until mixture thickens. Top cookies with half of cream. Arrange half of berries over cream; Top with remaining cookie pieces.
In microwave-safe bowl, microwave chocolate chips and remaining cream in 30 second intervals, stirring until smooth. Pour over cookies Top with remaining cream, berries, and mint.
